Pappardelle with smoked chicken
6 servings

Ingredients
750 grams of pappardelle (wide noodles)
1 smoked chicken, without skin, sliced
½ cup (125 grams) of white wine
1 cup (250 ml) of cream
2 tablespoons of young onion, sliced
freshly ground black pepper

Watercress butter
½ (125 grams) of soft butter
1 mashed clove of garlic
1 tablespoon of lemon juice
6 watercress flowers, finely minced

Preparation

  1. Watercress butter: in a bowl mix the butter, garlic, lemon juice and flowers; mix very well and set aside.
  2. Cook the pasta ‘al dente’ in plenty of water with salt. Drain and keep hot.
  3. Heat a Teflon pan at medium heat and cook the chicken, mixing it for about 1-2 minutes. Add the cream, wine onion and black pepper. Lower the heat and cook for 2 minutes. Serve the pasta add the chicken and watercress butter.

Note
The ideal side dish for this plate is a watercress salad seasoned with vinegar and parmesan cheese peelings. This watercress butter also tastes great as sandwich spread.
