Pasta with forest mushrooms

Pasta with forest mushrooms
4 servings

Ingredients
375 grams of pasta of your choice
2 tablespoons of vegetable oil
1 mashed clove of garlic
750 grams of varied edible mushrooms

White sauce
30 grams of butter
2 tablespoons of flour
2 cups (500 ml) of milk
˝ teaspoons of ground nutmeg
freshly ground black pepper

Preparation

  1. Cook the pasta ‘al dente’ in boiling water with salt. Drain and keep hot.
  2. Sauce: Melt the butter in a pan at medium heat. Add the flour and mix for 1 minute. Take of the fire, add the milk and beat until smooth. Place back on the fire and stir constantly until it thickens. Season with nutmeg and pepper. Pour over the pasta, mix and keep hot.
  3. Heat oil in a frying pan at medium heat and sauté the garlic and mushrooms for 5-6 minutes or until the mushrooms soften. Serve the pasta with the mushroom mix.

Note
If you can only find regular mushrooms, add a couple dry mushrooms to give it extra flavor.  You’ll have to soak the dry mushrooms in hot water for about 20-30 minutes or until they soften; then drain well and slice them or mince them before cooking it with the rest of the fresh mushrooms. Dry mushrooms have a strong taste, so you will only need a few.
