Pasta with avocado sauce 6 servings
Ingredients 500 grams of cannelloni or your choice of pasta 125 grams of peas 125 grams of soft zucchini, sliced
Avocado sauce 1 ripe avocado, seedless and peeled 1 cup (250 grams) of fresh cheese, drained 1 tablespoon of lemon juice 2 teaspoons of finely grates lemon peel 2 tablespoons of milk 2 tablespoons of coriander, minced freshly ground black pepper fresh parmesan cheese (optional)
Preparation
Cook the pasta ‘al dente’ in plenty of boiling water with salt. Drain and keep hot.
Sauce: Grind or blend the avocado with the fresh cheese, lemon juice and grated peels, milk, coriander and pepper. Set on the side.
Cook (steam or microwave) separately, the peas and the zucchini until soft. Drain well. Add the vegetables to the hot pasta and mix. Serve the pasta covering it with the sauce and parmesan peelings (if used).
