Lobster in pasta nests 4 portions
Ingredients 375 good quality noodles the pulp of lobster 3 tails cut in 4 cm pieces flour vegetable oil
Lemon cream ½ (125 grams) mayonnaise ¼ (60 ml) of sour cream 1 tablespoon of finely grated lemon peel 1 tablespoon of lemon juice 1 tablespoon of mustard 2 tablespoons of fresh estragon, minced or 1 teaspoon of dry estragon
Preparation
- Cook the pasta in abundant water with salt until it is almost cooked. Drain, rinse twice and dry lightly. Set aside.
- Lemon cream: in a bowl place the mayonnaise, sour cream, lemon juice and grated peels, mustard and estragon. Mix and set aside.
- Flour a piece of lobster and wrap it in noodles giving it a next appearance. Repeat until you finish with the lobster and noodles.
- Heat oil in a tall frying pan. Once its bubbling, fry the nets by batches until they golden on all sides. Drain on paper towels. Serve right away with the lemon cream.
Note This dish is also delicious made with large shrimp.
