French pizza (pissaldiére)

Ingredients
2 amount for basic pizza dough (see basic pizza dough)
24 fillets of anchovies
125 grams of black seedless olives
2 tablespoons of capers, drained
60 grams of pine kernels
freshly ground black pepper

Onion covering
2-3 tablespoons of olive oil
8 onions, finely sliced
6 mashed cloves of garlic
2 tablespoons of fresh thyme, minced
1 teaspoon of dry thyme
2 table spoons of sugar

Preparation

  1. Prepare the pizza dough like is explained in the recipe. Divide in two portions and place each one in a pan of 26 x 32 cm.
  2. Covering: Heat oil in a frying pan, at medium heat and sauté the garlic and onions for 10 minutes of until the onion soften. Lower the heat, add the thyme and sugar and cook for 20 minutes, mixing often until the mixture starts to caramel.
  3. Divide the onion covering over the two pizza bases, adorn with the fillets of anchovies, olives, capers, pine kernels and season with pepper. Bake for 20-25 minutes or until the pizza turns golden.
