Bacon and pear pizza

Bacon and pear pizza
4 servings

Ingredients
1 amount for basic pizza dough (see basic pizza dough)
155 grams of bacon (with more meat than grease), sliced
2 firm pears, seedless, peeled and sliced
100 grams of cabrales cheese
60 grams of nuts, minced
125 grams of fresh watercress, thickly minced
2 tablespoons of vinegar
freshly ground black pepper

Preparation

  • Prepare the pizza dough as explained in the recipe. Divide in four portions and with each one form a 15 cm disk. Place on a greased pan and cover with bacon slices.
  • Arrange the pea slices over the bacon ones; sprinkle cheese and nuts. Bake for 15-20 minutes or until the pizza dough cooks and is golden.
  • Just before serving, sprinkle the watercress with vinegar and add it to the pizzas. Season with black pepper and serve right away.

Note
The pizza dough make with olive oil has a crunchy exterior while the inside remains soft. A lot of pizza experts also suggest spreading olive oil on the pizza before adding the covering. This avoids it getting to dry, at the same time giving it a perfect golden.
