Cheese turnovers (empanadas)
10 turnovers

Ingredients
2 amount for basic pizza dough (see basic pizza dough)
olive oil

Cheese filling
200 grams of cream cheese
60 grams of cheddar type of cheese, grated
60 grams of Swiss type cheese, grated
60 grams of manchengo cheese, grated
3 tablespoons of young onions, minced
freshly ground black pepper

Preparation

  1. Filling: In a bowl mix the cream cheese, cheddar type of cheese, Swiss type of cheese, manchengo, onions and black pepper. Mix well. Set aside.
  2. Prepare the dough as explained in the recipe and divide in ten portions. With each portion make a disk of about 5 mm of thickness and 15 cm wide.
  3. Divide the filling evenly between the 10 disks, moisten the edges with water and close the turnovers, sealing them with a fork. Place in a greased pan spread olive oil on them and bake for 20-25 minutes or until they swell and golden.

Oven temperature 200C
These tasty turnovers have a great cheese filling. If you like Roquefort cheese you can use that instead of the Swiss kind.
